Sharbat E Faloodeh
Sharbat-e Faloodeh is a traditional Iranian cold dessert similar to a sorbet. It consists of thin vermicelli-sized noodles made from starch in a semi-frozen syrup containing sugar and rose water.
Ingredients - Serves 4
- Cherries - For garnish
- Pistachios - 1/4 cup, chopped
- Lime juice - 1 tablespoon
- Rose water - 1/2 cup
- Sugar - 1 cup
- Corn starch - 1/2 cup
Let's Get Started
- In a saucepan, mix corn starch with a cup of water until it dissolves completely.
- Place the saucepan over medium heat, add sugar and stir until it thickens into a dough-like consistency.
- Add rose water and stir well. Remove from heat and let it cool.
- Once cooled, pass the mixture through a potato ricer or a large grater to create thin, noodle-like strands. Spread these out and freeze for at least 2 hours.
- When ready to serve, break up the frozen strands and mix with lime juice.
- Serve in bowls, garnished with chopped pistachios and cherries.
