Sharbat-e Faloodeh is a traditional Iranian cold dessert similar to a sorbet. It consists of thin vermicelli-sized noodles made from starch in a semi-frozen syrup containing sugar and rose water.

Ingredients - Serves 4

Let's Get Started

  1. In a saucepan, mix corn starch with a cup of water until it dissolves completely.
  2. Place the saucepan over medium heat, add sugar and stir until it thickens into a dough-like consistency.
  3. Add rose water and stir well. Remove from heat and let it cool.
  4. Once cooled, pass the mixture through a potato ricer or a large grater to create thin, noodle-like strands. Spread these out and freeze for at least 2 hours.
  5. When ready to serve, break up the frozen strands and mix with lime juice.
  6. Serve in bowls, garnished with chopped pistachios and cherries.
