Sesame Tempeh Bowls
These Sesame Tempeh Bowls are a healthy, filling vegan meal packed with fresh veggies, cooked quinoa, and crispy tempeh.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Cucumber - 1, julienned
- Carrot - 1, julienned
- Red bell pepper - 1, sliced
- Quinoa - 1 cup, cooked
- Garlic - 2 cloves, minced
- Maple syrup - 2 tablespoons
- Soy sauce - 1/4 cup
- Sesame oil - 2 tablespoons
- Tempeh - 1 package, cubed
Let's Get Started
- Heat the sesame oil in a pan over medium heat.
- Add the tempeh cubes and cook until browned on all sides.
- In a small bowl, combine the soy sauce, maple syrup, and minced garlic. Pour this sauce over the tempeh and stir to coat.
- Continue cooking the tempeh until the sauce has thickened, about 5 minutes.
- Divide the cooked quinoa between four bowls.
- Top each bowl with the cooked tempeh, sliced bell pepper, julienned carrot, julienned cucumber, and chopped green onions.
- Sprinkle each bowl with sesame seeds before serving.
