Sausage and Onion Casserole
A hearty and comforting casserole made with sausages, onions, and a rich gravy.
Ingredients - Serves 4
- Milk - 1/4 cup
- Butter - 2 tablespoons
- Potatoes - 4 large, peeled and cut into chunks
- Salt and pepper - To taste
- Tomato paste - 2 tablespoons
- Worcestershire sauce - 1 tablespoon
- Beef stock - 2 cups
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onions - 2 large, sliced
- Sausages - 8
Let's Get Started
- Preheat the oven to 350°F.
- In a large frying pan, brown the sausages in the olive oil. Remove and set aside.
- In the same pan, add the onions and garlic and cook until softened.
- Add the beef stock, Worcestershire sauce, tomato paste, salt, and pepper to the pan. Bring to a simmer.
- Place the sausages in a casserole dish and pour over the onion and stock mixture.
- Cover and bake in the oven for 30 minutes.
- While the casserole is cooking, boil the potatoes until tender. Drain and mash with the butter and milk. Season with salt and pepper.
- Remove the casserole from the oven and top with the mashed potatoes.
- Return to the oven, uncovered, and bake for a further 30 minutes, or until the potatoes are golden and the gravy is bubbling.
