Salt Baked Chicken

Ingredients - Serves 4
- Green onions - 2, cut into pieces
- Fresh ginger - 1 piece, sliced
- Chinese five-spice powder - 1 tablespoon
- Sea salt - 2 lbs
- Whole chicken - 1 (about 3-4 lbs)
Let's Get Started
- Preheat your oven to 400°F (200°C).
- Clean the chicken and pat it dry with paper towels.
- Rub the chicken inside and out with the five-spice powder.
- Stuff the chicken with the ginger and green onions.
- Pour the sea salt into a large oven-safe pot or Dutch oven. Place the chicken on top of the salt, breast-side up.
- Cover the pot with a lid or aluminum foil and bake for about 1 hour, or until the chicken is cooked through.
- Remove the pot from the oven and let the chicken rest for 10 minutes before removing it from the salt.
- Carve the chicken and serve.
