  1. Cook the bacon in a skillet over medium heat until crispy. Remove with a slotted spoon and set aside.
  2. In the same skillet, add the bread cubes and cook in the bacon fat until golden and crispy.
  3. In a large bowl, whisk together the vinegar, mustard, olive oil, salt, and pepper to make the dressing.
  4. Add the frisée lettuce to the bowl and toss to coat with the dressing.
  5. Divide the dressed lettuce among four plates. Top each with equal amounts of the crispy bacon and croutons.
  6. Place a poached egg on top of each salad. Serve immediately.
