Salade Lyonnaise
Salade Lyonnaise is a classic French salad from the Lyon region, featuring frisée lettuce, bacon, croutons, and a poached egg.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 1/4 cup
- Dijon mustard - 1 tablespoon
- Red wine vinegar - 2 tablespoons
- Eggs - 4, poached
- Stale bread - 2 slices, cut into cubes
- Bacon - 8 slices, cut into lardons
- Frisée lettuce - 1 head, torn into bite-sized pieces
Let's Get Started
- Cook the bacon in a skillet over medium heat until crispy. Remove with a slotted spoon and set aside.
- In the same skillet, add the bread cubes and cook in the bacon fat until golden and crispy.
- In a large bowl, whisk together the vinegar, mustard, olive oil, salt, and pepper to make the dressing.
- Add the frisée lettuce to the bowl and toss to coat with the dressing.
- Divide the dressed lettuce among four plates. Top each with equal amounts of the crispy bacon and croutons.
- Place a poached egg on top of each salad. Serve immediately.
