Saffron Seafood Stew
A hearty and flavorful stew that combines a variety of seafood with the unique taste of saffron.
Ingredients - Serves 4
- Parsley - 1/4 cup, chopped
- Mixed seafood - 1.5 pounds (such as shrimp, mussels, and scallops)
- Salt and pepper - To taste
- Tomatoes - 2, chopped
- Fish stock - 4 cups
- White wine - 1 cup
- Saffron threads - 1/2 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the saffron and cook for another minute.
- Add the white wine and bring to a boil. Reduce the heat and simmer until the wine is reduced by half, about 5 minutes.
- Add the fish stock, tomatoes, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the seafood and cook until the seafood is cooked through, about 5 minutes.
- Stir in the parsley and serve the stew hot.
