Sabzi Polo Mahi
Sabzi Polo Mahi is a traditional Persian dish made with herbed rice and fish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh herbs (such as dill, parsley, and cilantro) - 1 cup, chopped
- Fish fillets (such as salmon or trout) - 4 pieces
- Basmati rice - 2 cups
Let's Get Started
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a pot, bring water to a boil and add salt. Cook the rice until it is parboiled (partially cooked), about 5 minutes. Drain the rice.
- In a large non-stick pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
- Add the chopped fresh herbs to the pan and sauté for another 2 minutes.
- Add the parboiled rice to the pan and mix well with the herbs. Season with salt and pepper to taste.
- Reduce the heat to low, cover the pan, and let the rice cook for about 20 minutes, or until it is fully cooked and fluffy.
- While the rice is cooking, season the fish fillets with salt, pepper, and lemon juice.
- In a separate pan, heat olive oil over medium heat. Cook the fish fillets for about 3-4 minutes on each side, or until they are cooked through.
- Serve the herbed rice with the cooked fish fillets on top. Enjoy!
