Ingredients - Serves 4

Let's Get Started

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a pot, bring water to a boil and add salt. Cook the rice until it is parboiled (partially cooked), about 5 minutes. Drain the rice.
  3. In a large non-stick pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  4. Add the chopped fresh herbs to the pan and sauté for another 2 minutes.
  5. Add the parboiled rice to the pan and mix well with the herbs. Season with salt and pepper to taste.
  6. Reduce the heat to low, cover the pan, and let the rice cook for about 20 minutes, or until it is fully cooked and fluffy.
  7. While the rice is cooking, season the fish fillets with salt, pepper, and lemon juice.
  8. In a separate pan, heat olive oil over medium heat. Cook the fish fillets for about 3-4 minutes on each side, or until they are cooked through.
  9. Serve the herbed rice with the cooked fish fillets on top. Enjoy!
