Rosolli
Rosolli is a traditional Finnish salad made with root vegetables and pickled beets.
Ingredients - Serves 6
- Sour cream - 1/2 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Fresh dill - 2 tablespoons, chopped
- Onion - 1 small, finely chopped
- Pickles - 4 small, diced
- Apple - 1 large, diced
- Beets - 2 medium, boiled and diced
- Carrots - 2 medium, boiled and diced
- Potatoes - 3 medium, boiled and diced
Let's Get Started
- In a large bowl, combine the boiled and diced potatoes, carrots, beets, apple, pickles, and onion.
- Add the chopped fresh dill, salt, and black pepper. Mix well to combine.
- Gently fold in the sour cream until all the ingredients are coated.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled and enjoy!
