Roman Farro Salad
A hearty, healthy salad featuring farro, an ancient grain with a nutty flavor, mixed with fresh vegetables and a tangy vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Olive oil - 1/4 cup
- Feta cheese - 1/2 cup, crumbled
- Red onion - 1/2, thinly sliced
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Water - 3 cups
- Farro - 1 cup
Let's Get Started
- Rinse the farro under cold water and drain.
- In a medium pot, bring the water to a boil. Add the farro, reduce the heat to low, and cover. Simmer for 25-30 minutes, or until the farro is tender.
- Drain the farro and let it cool.
- In a large bowl, combine the farro, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the vinaigrette over the salad and toss to combine.
- Serve the salad at room temperature or chilled.
