Roasted Turkey with Red Wine Gravy

Ingredients - Serves 8
- All-purpose flour - 1/4 cup
- Chicken broth - 2 cups
- Red wine - 2 cups
- Fresh rosemary - 2 sprigs
- Fresh thyme - 4 sprigs
- Garlic cloves - 4
- Onion - 1, quartered
- Salt and pepper - To taste
- Butter - 1/2 cup, softened
- Whole turkey - 1 (12 pound)
Let's Get Started
- Preheat your oven to 325°F (165°C).
- Rinse the turkey and pat dry. Rub the turkey all over with the softened butter, then season generously with salt and pepper.
- Place the onion, garlic, thyme, and rosemary inside the turkey cavity.
- Place the turkey on a rack in a roasting pan. Roast in the preheated oven for about 4 hours, or until the internal temperature reaches 165°F (74°C).
- While the turkey is roasting, make the red wine gravy. In a saucepan, combine the red wine and chicken broth and bring to a simmer.
- In a small bowl, mix the flour with a little bit of water to make a smooth paste. Slowly whisk this into the simmering wine and broth mixture.
- Continue to cook the gravy, stirring constantly, until it thickens. Season with salt and pepper to taste.
- Once the turkey is done, remove from the oven and let rest for 20 minutes before carving. Serve with the red wine gravy.
