Roasted Lamb Saddle with Pistachio Crust

Ingredients - Serves 4
- Breadcrumbs - 1/2 cup
- Dijon mustard - 2 tablespoons
- Fresh thyme - 1 tablespoon, chopped
- Fresh rosemary - 2 tablespoons, chopped
- Pistachios - 1 cup, shelled and chopped
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Lamb saddle - 1 (about 2 pounds)
Let's Get Started
- Preheat the oven to 375°F.
- Season the lamb saddle with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the lamb and sear on all sides until browned. Remove from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant. Add the pistachios, rosemary, thyme, mustard, and breadcrumbs. Stir until well combined.
- Spread the pistachio mixture over the lamb, pressing it into the meat to form a crust.
- Transfer the skillet to the oven and roast for about 45 minutes, or until the lamb is cooked to your desired level of doneness.
- Let the lamb rest for 10 minutes before slicing and serving.
