Roasted Eggplant with Edamame
A healthy and flavorful dish featuring roasted eggplant and protein-packed edamame.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Edamame - 1 cup, shelled and cooked
- Salt and pepper - To taste
- Olive oil - 3 tablespoons
- Eggplant - 2 medium, cut into 1-inch cubes
Let's Get Started
- Preheat the oven to 400°F.
- Toss the eggplant cubes with the olive oil, salt, and pepper. Spread out on a baking sheet.
- Roast the eggplant for 20-25 minutes, or until tender and golden.
- While the eggplant is roasting, heat the sesame oil in a pan over medium heat.
- Add the garlic and cook for 1-2 minutes, until fragrant.
- Add the cooked edamame and soy sauce to the pan. Stir to combine and cook for another 2-3 minutes.
- Once the eggplant is done roasting, add it to the pan with the edamame. Stir to combine.
- Sprinkle with sesame seeds before serving.
