Roasted Eggplant with Edamame

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Toss the eggplant cubes with the olive oil, salt, and pepper. Spread out on a baking sheet.
  3. Roast the eggplant for 20-25 minutes, or until tender and golden.
  4. While the eggplant is roasting, heat the sesame oil in a pan over medium heat.
  5. Add the garlic and cook for 1-2 minutes, until fragrant.
  6. Add the cooked edamame and soy sauce to the pan. Stir to combine and cook for another 2-3 minutes.
  7. Once the eggplant is done roasting, add it to the pan with the edamame. Stir to combine.
  8. Sprinkle with sesame seeds before serving.
