Roast Chicken with Herbs
A simple and flavorful roast chicken, seasoned with a blend of fresh herbs and spices.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon - 1, zested and juiced
- Garlic - 4 cloves, minced
- Fresh sage - 2 sprigs
- Fresh thyme - 2 sprigs
- Fresh rosemary - 2 sprigs
- Whole chicken - 1 (about 4 pounds)
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out, then pat dry with paper towels.
- In a small bowl, combine the minced garlic, lemon zest, and chopped herbs. Mix in the olive oil to form a paste.
- Rub the herb paste all over the chicken, both under and over the skin. Season the chicken generously with salt and pepper.
- Place the chicken in a roasting pan and stuff the cavity with the lemon halves and herb sprigs.
- Roast the chicken in the preheated oven for about 1.5 hours, or until the juices run clear when you cut between a leg and thigh.
- Remove the chicken from the oven and let it rest for 15 minutes before carving.
