Roast Chicken with Herbs

Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out, then pat dry with paper towels.
  3. In a small bowl, combine the minced garlic, lemon zest, and chopped herbs. Mix in the olive oil to form a paste.
  4. Rub the herb paste all over the chicken, both under and over the skin. Season the chicken generously with salt and pepper.
  5. Place the chicken in a roasting pan and stuff the cavity with the lemon halves and herb sprigs.
  6. Roast the chicken in the preheated oven for about 1.5 hours, or until the juices run clear when you cut between a leg and thigh.
  7. Remove the chicken from the oven and let it rest for 15 minutes before carving.
