Rau Muong Xao Toi

Ingredients - Serves 4
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Fish sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic - 5 cloves, minced
- Water spinach - 1 pound
Let's Get Started
- Wash the water spinach thoroughly and cut into 3-inch lengths.
- Heat the vegetable oil in a wok or large frying pan over medium heat.
- Add the minced garlic and stir-fry until it turns golden brown.
- Add the water spinach to the wok and stir-fry for 2-3 minutes, until it wilts.
- Add the fish sauce, sugar, salt, and black pepper. Stir well to combine.
- Continue to stir-fry for another 2-3 minutes, until the water spinach is cooked to your liking.
- Serve hot as a side dish or main course.
