  1. Rinse the quinoa under cold water until the water runs clear.
  2. Combine the quinoa and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water has been absorbed.
  3. While the quinoa is cooking, prepare the vinaigrette by whisking together the olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, combine the cooked quinoa, spinach, and cherry tomatoes. Drizzle with the vinaigrette and toss to combine.
