Quinoa Spinach Salad
A healthy, hearty salad with quinoa, spinach, cherry tomatoes, and a simple lemon vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Cherry tomatoes - 1 cup, halved
- Spinach - 4 cups, chopped
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- Combine the quinoa and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water has been absorbed.
- While the quinoa is cooking, prepare the vinaigrette by whisking together the olive oil, lemon juice, salt, and pepper.
- In a large bowl, combine the cooked quinoa, spinach, and cherry tomatoes. Drizzle with the vinaigrette and toss to combine.
- Serve the salad immediately, or refrigerate for up to 2 days.
