Quinoa Pilaf
A healthy and delicious side dish made with quinoa, vegetables, and spices.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Chicken or vegetable broth - 2 cups
- Red bell pepper - 1, finely chopped
- Carrot - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion, garlic, carrot, and bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Add the quinoa to the saucepan and cook for 2 minutes, stirring constantly.
- Add the broth, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
- Fluff the quinoa with a fork and stir in the parsley before serving.
