Quinoa Pilaf

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear.
  2. Heat the olive oil in a large saucepan over medium heat.
  3. Add the onion, garlic, carrot, and bell pepper. Cook until the vegetables are soft, about 5 minutes.
  4. Add the quinoa to the saucepan and cook for 2 minutes, stirring constantly.
  5. Add the broth, salt, and pepper. Bring to a boil.
  6. Reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
  7. Fluff the quinoa with a fork and stir in the parsley before serving.
