Let's Get Started

  1. Warm the milk to 86°F (30°C) in a large pot.
  2. Add the rennet and stir gently.
  3. Let the milk sit for 1 hour, or until it has set.
  4. Cut the curd into 1/2 inch pieces and let sit for 5 minutes.
  5. Stir in the cheese salt.
  6. Pour the curds into a cheese mold lined with cheesecloth.
  7. Press the cheese at medium pressure for 12 hours.
  8. Remove the cheese from the mold and let it air dry for 2-3 days.
  9. Age the cheese for at least 60 days before eating.
