Queijo Da Serra
Queijo da Serra is a traditional Portuguese cheese made from sheep's milk. It's creamy, slightly tangy, and perfect for spreading on bread or crackers.
Ingredients - Serves 8
- Cheese mold - 1
- Cheese salt - 1 1/2 teaspoons
- Rennet - 1/4 teaspoon
- Sheep's milk - 1 gallon
Let's Get Started
- Warm the milk to 86°F (30°C) in a large pot.
- Add the rennet and stir gently.
- Let the milk sit for 1 hour, or until it has set.
- Cut the curd into 1/2 inch pieces and let sit for 5 minutes.
- Stir in the cheese salt.
- Pour the curds into a cheese mold lined with cheesecloth.
- Press the cheese at medium pressure for 12 hours.
- Remove the cheese from the mold and let it air dry for 2-3 days.
- Age the cheese for at least 60 days before eating.
