Pot Au Feu
Pot au Feu is a traditional French beef stew made with a variety of vegetables and flavorful broth.
Ingredients - Serves 6
- Salt and pepper - To taste
- Thyme - 2 sprigs
- Bay leaves - 2
- Turnips - 2, peeled and cut into chunks
- Parsnips - 2, peeled and cut into chunks
- Celery stalks - 4, cut into chunks
- Onions - 2, peeled and quartered
- Leeks - 2, cleaned and sliced
- Carrots - 4, peeled and cut into chunks
- Beef bones - 1 pound
- Beef chuck roast - 2 pounds
Let's Get Started
- Place the beef chuck roast and beef bones in a large pot and cover with water.
- Bring to a boil, then reduce the heat and simmer for 1 hour, skimming off any impurities that rise to the surface.
- Add the carrots, leeks, onions, celery stalks, parsnips, turnips, bay leaves, thyme, salt, and pepper to the pot.
- Simmer for another 2 hours, or until the beef is tender and the vegetables are cooked through.
- Remove the beef and vegetables from the pot and slice the beef into thick slices.
- Serve the beef and vegetables in bowls, ladling some of the flavorful broth over the top.
