Let's Get Started

  1. Place the beef chuck roast and beef bones in a large pot and cover with water.
  2. Bring to a boil, then reduce the heat and simmer for 1 hour, skimming off any impurities that rise to the surface.
  3. Add the carrots, leeks, onions, celery stalks, parsnips, turnips, bay leaves, thyme, salt, and pepper to the pot.
  4. Simmer for another 2 hours, or until the beef is tender and the vegetables are cooked through.
  5. Remove the beef and vegetables from the pot and slice the beef into thick slices.
  6. Serve the beef and vegetables in bowls, ladling some of the flavorful broth over the top.
