Pollo en Fricase
Pollo en Fricase is a traditional Puerto Rican chicken stew that is braised in wine with potatoes and carrots. It's a hearty and comforting dish that's perfect for any time of the year.
Ingredients - Serves 4
- Green olives - 1/2 cup
- Tomato sauce - 1 cup
- Bay leaf - 1
- Carrots - 2, peeled and sliced
- Potatoes - 2, peeled and cut into chunks
- Dry white wine - 1 cup
- Red bell pepper - 1, chopped
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken pieces - 2 pounds
Let's Get Started
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
- Add the wine to the pot and scrape the bottom to loosen any browned bits.
- Return the chicken to the pot. Add the potatoes, carrots, bay leaf, tomato sauce, and olives.
- Cover the pot and simmer for about 1 hour, or until the chicken is cooked through and the vegetables are tender.
- Serve the Pollo en Fricase with rice or bread.
