Pollo al Curry
Pollo al Curry is a delicious and flavorful chicken curry dish with a blend of spices and creamy sauce.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Lime juice - 1 tablespoon
- Tomato paste - 2 tablespoons
- Coconut milk - 1 can (400ml)
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Chicken breasts - 4, boneless and skinless, cut into bite-sized pieces
Let's Get Started
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the chicken pieces to the pan and cook until browned on all sides.
- In a small bowl, mix together the curry powder, turmeric, cumin, and coriander.
- Sprinkle the spice mixture over the chicken and stir well to coat.
- Add the coconut milk and tomato paste to the pan, and stir to combine.
- Reduce the heat to low, cover the pan, and simmer for 20 minutes, or until the chicken is cooked through and tender.
- Stir in the lime juice and season with salt to taste.
- Serve the Pollo al Curry over steamed rice or with naan bread.
- Garnish with fresh cilantro before serving.
