Poffertjes
Poffertjes are a traditional Dutch batter treat. They are fluffy, light and a smaller version of pancakes. They are usually served with powdered sugar and butter.
Ingredients - Serves 4
- Powdered sugar - For serving
- Butter - 2 tablespoons, melted
- Vanilla extract - 1 teaspoon
- Milk - 1 cup
- Eggs - 2
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 1 cup
Let's Get Started
- In a large bowl, combine the flour, baking powder, and salt.
- In another bowl, beat the eggs, then add the milk, vanilla extract, and melted butter. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until the batter is smooth.
- Heat a poffertjes pan over medium heat and brush with a little melted butter.
- Pour the batter into the cavities of the pan, filling them about three-quarters full.
- Cook for 2-3 minutes, or until the bottoms are golden brown. Flip the poffertjes and cook for another 1-2 minutes.
- Remove the poffertjes from the pan and dust with powdered sugar. Serve warm.
