Pinto Bean and Beef Fajitas

Ingredients - Serves 4
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Salsa - 1/2 cup
- Guacamole - 1/2 cup
- Sour cream - 1/2 cup
- Tortillas - 8, warmed
- Olive oil - 2 tablespoons
- Fajita seasoning - 2 tablespoons
- Pinto beans - 1 can, drained and rinsed
- Onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced
- Flank steak - 1 pound, thinly sliced
Let's Get Started
- In a large skillet, heat olive oil over medium-high heat.
- Add the sliced flank steak and cook until browned, about 3-4 minutes per side. Remove from skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5 minutes.
- Add the drained and rinsed pinto beans to the skillet. Stir in the fajita seasoning and cook for an additional 2 minutes.
- Return the cooked flank steak to the skillet and toss everything together to combine.
- Warm the tortillas in a separate skillet or in the oven.
