Pepper Soup
Pepper soup is a spicy and flavorful Nigerian soup made with assorted meat, spices, and peppers.
Ingredients - Serves 6
- Water - 6 cups
- Salt - To taste
- Seasoning cubes - 2
- Scent leaves - 1 handful, chopped
- Uziza leaves - 1 handful, chopped
- Crayfish - 2 tablespoons, ground
- Scotch bonnet peppers - 3-4, chopped
- Ginger - 1-inch piece, grated
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Assorted meat (goat meat, beef, or chicken) - 1 kg
Let's Get Started
- Wash and clean the assorted meat thoroughly.
- In a large pot, add the meat, chopped onion, minced garlic, grated ginger, and scotch bonnet peppers.
- Add water and bring to a boil. Reduce the heat and let it simmer for about 30 minutes or until the meat is tender.
- Add the crayfish, seasoning cubes, and salt. Stir well and let it simmer for another 10 minutes.
- Add the chopped uziza leaves and scent leaves. Stir and let it simmer for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot and enjoy!
