Pecorino Toscano
This simple pasta dish highlights the rich and savory flavor of Pecorino Toscano cheese, a traditional Italian cheese from Tuscany.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh parsley - 1/4 cup, chopped
- Pecorino toscano cheese - 1 cup, grated
- Red pepper flakes - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Spaghetti - 1 pound
Let's Get Started
- Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
- Add the cooked spaghetti to the skillet and toss to coat in the garlic oil.
- Remove the skillet from the heat and add the Pecorino Toscano cheese, tossing until the cheese is melted and the pasta is coated in the sauce. If the sauce is too thick, add some of the reserved pasta water to thin it out.
- Season with salt and pepper to taste, then stir in the chopped parsley.
- Serve the pasta hot, with extra Pecorino Toscano cheese on top if desired.
