Peanut Chicken Stir Fry
This delicious peanut chicken stir fry is packed with flavor and is quick and easy to make.
Ingredients - Serves 4
- Cooked rice - 4 cups, for serving
- Peanuts - 1/4 cup, chopped
- Green onions - 4, sliced
- Carrots - 2, julienned
- Broccoli florets - 2 cups
- Bell peppers - 2, thinly sliced
- Vegetable oil - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Honey - 1 tablespoon
- Peanut butter - 2 tablespoons
- Soy sauce - 3 tablespoons
- Chicken breast - 2, boneless and skinless, cut into thin strips
Let's Get Started
- In a small bowl, whisk together soy sauce, peanut butter, honey, minced garlic, and grated ginger. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken strips and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add bell peppers, broccoli florets, carrots, and sliced green onions. Stir fry for 3-4 minutes, until vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour the peanut sauce over the chicken and vegetables. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes, until the sauce is heated through and thickened slightly.
- Sprinkle chopped peanuts over the stir fry and stir to combine.
- Serve the peanut chicken stir fry over cooked rice.
