  1. In a small bowl, whisk together soy sauce, peanut butter, honey, minced garlic, and grated ginger. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken strips and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add bell peppers, broccoli florets, carrots, and sliced green onions. Stir fry for 3-4 minutes, until vegetables are crisp-tender.
