Onion and Lentil Soup

Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Vegetable broth - 4 cups
- Green lentils - 1 cup
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 2 cloves, minced
- Onions - 2 large, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, garlic, carrots, and celery and cook until the vegetables are soft, about 10 minutes.
- Add the lentils, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
