Nectarine and Mango Pancakes
These fluffy pancakes are bursting with the sweet and tangy flavors of nectarines and mangoes.
Ingredients - Serves 4
- Maple syrup - For serving
- Mango - 1, diced
- Nectarines - 2, diced
- Butter - 2 tablespoons, melted
- Milk - 1 cup
- Egg - 1
- Sugar - 2 tablespoons
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg and then add the milk and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
- Gently fold in the diced nectarines and mango.
- Heat a non-stick skillet or griddle over medium heat. Grease with a little butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with maple syrup and additional diced nectarines and mango on top, if desired.
