Mushroom and Quinoa Pilaf

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until the onions are translucent, about 5 minutes.
  4. Add the mushrooms, thyme, salt, and pepper to the skillet. Cook until the mushrooms are tender and golden brown, about 8 minutes.
  5. Add the cooked quinoa to the skillet and stir to combine. Cook for an additional 2 minutes to allow the flavors to meld together.
  6. Remove from heat and stir in the chopped parsley.
  7. Serve hot as a side dish or as a main course with a salad.
