Mushroom and Quinoa Pilaf
This flavorful mushroom and quinoa pilaf is a nutritious and delicious side dish.
Ingredients - Serves 4
- Parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Mushrooms - 8 ounces, sliced
- Vegetable broth - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water.
- In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until the onions are translucent, about 5 minutes.
- Add the mushrooms, thyme, salt, and pepper to the skillet. Cook until the mushrooms are tender and golden brown, about 8 minutes.
- Add the cooked quinoa to the skillet and stir to combine. Cook for an additional 2 minutes to allow the flavors to meld together.
- Remove from heat and stir in the chopped parsley.
- Serve hot as a side dish or as a main course with a salad.
