Mulled Wine Macarons
These festive macarons are filled with a mulled wine-infused buttercream for a unique holiday treat.
Ingredients - Serves 24
- Ground nutmeg - 1/4 teaspoon
- Ground cloves - 1/4 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Mulled wine - 1/4 cup
- Butter - 1/2 cup, softened
- Red food coloring - 1/4 teaspoon
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and beat until stiff peaks form. Beat in the food coloring.
- Fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe 1-inch circles onto the prepared baking sheets.
- Bake for 15 minutes, or until the macarons are set. Let cool completely on the baking sheets.
- In a small saucepan, simmer the mulled wine until reduced by half. Let cool.
- In a large bowl, beat the butter until creamy. Beat in the reduced mulled wine, cinnamon, cloves, and nutmeg until smooth.
- Transfer the buttercream to a piping bag fitted with a round tip and pipe onto half of the macarons. Top with the remaining macarons to form sandwiches.
