Moros Y Cristianos
Moros y Cristianos is a traditional Cuban dish made with black beans and rice, seasoned with spices and served as a flavorful side dish or main course.
Ingredients - Serves 6
- Cilantro - 2 tablespoons, chopped
- Salt and pepper - To taste
- Bay leaf - 1
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Green bell pepper - 1, diced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
- White rice - 2 cups
- Black beans - 2 cups, dried
Let's Get Started
- Rinse the black beans and soak them in water overnight. Drain and rinse again.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the soaked black beans, cumin, paprika, bay leaf, salt, and pepper to the pot. Stir well to combine.
- Add enough water to cover the beans by about 2 inches. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beans are tender.
- While the beans are cooking, prepare the white rice according to package instructions.
- Once the beans are tender, remove the bay leaf and adjust the seasoning if needed.
- Serve the Moros y Cristianos by spooning the black beans over the cooked white rice.
- Garnish with chopped cilantro and serve hot.
