Moqueca
Moqueca is a traditional Brazilian fish stew made with coconut milk, tomatoes, peppers, and spices.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Coconut milk - 1 can (13.5 oz)
- Tomatoes - 2, diced
- Bell peppers - 2, sliced
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Fish fillets - 1 lb
Let's Get Started
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the bell peppers and tomatoes, and cook for 5 minutes.
- Stir in the paprika, cumin, salt, and pepper.
- Add the fish fillets to the pot, and pour in the coconut milk and lime juice.
- Cover the pot and simmer for 20 minutes, or until the fish is cooked through.
- Garnish with chopped cilantro before serving.
- Serve hot with rice or crusty bread.
