Mondongo
Mondongo is a traditional Latin American dish made with tripe, vegetables, and spices.
Ingredients - Serves 6
- Water - 6 cups
- Salt and pepper - To taste
- Bay leaf - 2
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Tomatoes - 2, diced
- Potatoes - 2, peeled and diced
- Carrots - 2, sliced
- Bell pepper - 1, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Tripe - 2 pounds, cleaned and cut into small pieces
Let's Get Started
- In a large pot, bring water to a boil. Add the tripe and cook for 10 minutes. Drain and set aside.
- In the same pot, heat some oil over medium heat. Add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Add the tripe back to the pot along with the carrots, potatoes, tomatoes, cilantro, cumin, paprika, bay leaf, salt, and pepper. Stir well to combine.
- Pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat and simmer for 2-3 hours, or until the tripe is tender.
- Remove the bay leaves and adjust the seasoning if needed.
- Serve hot with rice or bread.
