Ingredients - Serves 6

Let's Get Started

  1. In a large pot, bring water to a boil. Add the tripe and cook for 10 minutes. Drain and set aside.
  2. In the same pot, heat some oil over medium heat. Add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
  3. Add the tripe back to the pot along with the carrots, potatoes, tomatoes, cilantro, cumin, paprika, bay leaf, salt, and pepper. Stir well to combine.
  4. Pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat and simmer for 2-3 hours, or until the tripe is tender.
  5. Remove the bay leaves and adjust the seasoning if needed.
  6. Serve hot with rice or bread.
