Let's Get Started

  1. Cook the ramen noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and cook for 1 minute until fragrant.
  3. Add the vegetable broth, miso paste, soy sauce, and mirin. Stir well to dissolve the miso paste.
  4. Bring the broth to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
  5. Divide the cooked ramen noodles between two bowls.
  6. Pour the hot miso broth over the noodles.
  7. Top each bowl with sliced green onions, soft-boiled eggs, corn kernels, bean sprouts, and shredded nori sheets.
  8. Serve hot and enjoy!
