Miso Ramen
This flavorful miso ramen is made with a rich broth, tender noodles, and a variety of toppings.
Ingredients - Serves 2
- Nori sheets - 2, shredded
- Bean sprouts - 1/2 cup
- Corn kernels - 1/2 cup
- Soft-boiled eggs - 2
- Green onions - 2, sliced
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Miso paste - 3 tablespoons
- Ramen noodles - 2 packs
Let's Get Started
- Cook the ramen noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and cook for 1 minute until fragrant.
- Add the vegetable broth, miso paste, soy sauce, and mirin. Stir well to dissolve the miso paste.
- Bring the broth to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
- Divide the cooked ramen noodles between two bowls.
- Pour the hot miso broth over the noodles.
- Top each bowl with sliced green onions, soft-boiled eggs, corn kernels, bean sprouts, and shredded nori sheets.
- Serve hot and enjoy!
