Mirza Ghasemi
Mirza Ghasemi is a traditional Persian dish made with grilled eggplant, tomatoes, garlic, and eggs.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Red pepper flakes - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Black pepper - To taste
- Salt - To taste
- Olive oil - 2 tablespoons
- Eggs - 4
- Garlic - 4 cloves, minced
- Tomatoes - 4 medium, diced
- Eggplants - 2 large
Let's Get Started
- Preheat the oven to 400°F.
- Prick the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplants from the oven and let them cool. Peel off the skin and chop the flesh into small pieces.
- Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
- Add diced tomatoes, turmeric, red pepper flakes, salt, and black pepper to the pan. Cook for 5-7 minutes, or until the tomatoes are soft and juicy.
- Add the chopped eggplant to the pan and mix well. Cook for another 5 minutes to allow the flavors to blend together.
- Create wells in the mixture and crack the eggs into the wells. Cover the pan and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Garnish with fresh parsley and serve hot with bread or rice.
