Let's Get Started

  1. Preheat the oven to 400°F.
  2. Prick the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft.
  3. Remove the eggplants from the oven and let them cool. Peel off the skin and chop the flesh into small pieces.
  4. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
  5. Add diced tomatoes, turmeric, red pepper flakes, salt, and black pepper to the pan. Cook for 5-7 minutes, or until the tomatoes are soft and juicy.
  6. Add the chopped eggplant to the pan and mix well. Cook for another 5 minutes to allow the flavors to blend together.
  7. Create wells in the mixture and crack the eggs into the wells. Cover the pan and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  8. Garnish with fresh parsley and serve hot with bread or rice.
