Minestrone Di Farro
A hearty and healthy Italian soup made with farro, vegetables, and beans.
Ingredients - Serves 6
- Parmesan cheese - For serving
- Salt and pepper - To taste
- Kale - 2 cups, chopped
- Vegetable broth - 6 cups
- Cannellini beans - 1 can, drained and rinsed
- Canned diced tomatoes - 1 can
- Farro - 1 cup
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
- Add the farro, tomatoes, beans, and broth and bring to a boil.
- Reduce the heat and simmer for 30 minutes, or until the farro is tender.
- Add the kale and cook for another 10 minutes.
- Season with salt and pepper to taste.
- Serve the soup hot, topped with grated Parmesan cheese.
