Milcaos
Milcaos are traditional Chilean potato pancakes made with grated potatoes and cooked until crispy.
Ingredients - Serves 4
- Vegetable oil - 1/4 cup
- Salt - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Potatoes - 4 large, peeled and grated
Let's Get Started
- Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
- In a large bowl, combine the grated potatoes, chopped onion, minced garlic, and salt. Mix well.
- Heat the vegetable oil in a large skillet over medium heat.
- Take a handful of the potato mixture and shape it into a pancake. Place it in the skillet and flatten it with a spatula.
- Cook the milcao for about 5 minutes on each side, or until golden brown and crispy.
- Repeat with the remaining potato mixture, adding more oil to the skillet as needed.
- Serve the milcaos hot as a side dish or as a main course with a dipping sauce of your choice.
