Mi Quang
Mi Quang is a traditional Vietnamese noodle dish that is flavorful and packed with fresh ingredients.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Peanuts - 1/4 cup, crushed
- Cilantro - 1/4 cup, chopped
- Lettuce - 1 cup, shredded
- Bean sprouts - 1 cup
- Chicken broth - 4 cups
- Fish sauce - 3 tablespoons
- Shallots - 2, thinly sliced
- Garlic - 3 cloves, minced
- Turmeric powder - 1 teaspoon
- Shrimp - 8 oz, peeled and deveined
- Pork shoulder - 8 oz, thinly sliced
- Rice noodles - 8 oz
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a bowl, marinate the pork shoulder and shrimp with turmeric powder, minced garlic, and salt. Let it sit for 10 minutes.
- Heat a large skillet over medium heat. Add the marinated pork shoulder and shrimp, and cook until they are cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced shallots and cook until they are caramelized.
- Add the chicken broth and fish sauce to the skillet. Bring to a simmer.
- To serve, divide the cooked rice noodles among bowls. Top with the cooked pork shoulder, shrimp, caramelized shallots, bean sprouts, lettuce, and cilantro.
- Pour the hot broth over the noodles and ingredients in each bowl.
- Garnish with crushed peanuts and serve with lime wedges.
