Menudo
Menudo is a traditional Mexican soup made with beef tripe, hominy, and a flavorful red chili broth.
Ingredients - Serves 6
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Ground cumin - 1 teaspoon
- Dried red chili peppers - 4, stemmed and seeded
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Hominy - 2 cans (15 ounces each), drained and rinsed
- Beef tripe - 2 pounds, cleaned and cut into small pieces
Let's Get Started
- In a large pot, bring water to a boil. Add the beef tripe and cook for 10 minutes. Drain and rinse the tripe.
- In the same pot, add the tripe, chopped onion, minced garlic, dried red chili peppers, ground cumin, dried oregano, salt, and pepper. Cover with water and bring to a boil.
- Reduce the heat to low and simmer for 2 to 3 hours, or until the tripe is tender.
- Add the drained and rinsed hominy to the pot and simmer for an additional 30 minutes.
- Serve hot, garnished with chopped cilantro and lime wedges.
