Let's Get Started

  1. In a large pot, bring water to a boil. Add the beef tripe and cook for 10 minutes. Drain and rinse the tripe.
  2. In the same pot, add the tripe, chopped onion, minced garlic, dried red chili peppers, ground cumin, dried oregano, salt, and pepper. Cover with water and bring to a boil.
  3. Reduce the heat to low and simmer for 2 to 3 hours, or until the tripe is tender.
  4. Add the drained and rinsed hominy to the pot and simmer for an additional 30 minutes.
  5. Serve hot, garnished with chopped cilantro and lime wedges.
