Mapo Tofu with Minced Meat
Mapo Tofu is a popular Chinese dish made with tofu and minced meat in a spicy sauce.
Ingredients - Serves 4
- Sesame oil - 1 teaspoon
- Salt - To taste
- Cooking oil - 2 tablespoons
- Green onions - 2 stalks, chopped
- Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
- Chicken or vegetable broth - 1 cup
- Soy sauce - 2 tablespoons
- Chili bean paste - 2 tablespoons
- Sichuan peppercorns - 1 teaspoon, crushed
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Minced meat (pork or beef) - 200g
- Tofu - 400g, firm or silken
Let's Get Started
- Cut the tofu into small cubes and set aside.
- Heat the cooking oil in a wok or large pan over medium heat.
- Add the minced garlic, ginger, and crushed Sichuan peppercorns. Stir-fry for about 1 minute until fragrant.
- Add the minced meat and cook until browned.
- Add the chili bean paste and stir-fry for another minute.
- Pour in the soy sauce and chicken or vegetable broth. Stir well to combine.
- Gently add the tofu cubes to the pan and simmer for about 5 minutes.
- Stir in the dissolved cornstarch mixture to thicken the sauce.
- Season with salt to taste.
- Remove from heat and drizzle with sesame oil.
- Garnish with chopped green onions.
- Serve hot with steamed rice.
