Mango and Sticky Rice
This traditional Thai dessert is made with sweet sticky rice, coconut milk, and fresh mango.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Mango - 2, peeled and sliced
- Salt - 1/4 teaspoon
- Sugar - 1/4 cup
- Coconut milk - 1 can
- Sweet sticky rice - 1 cup
Let's Get Started
- Rinse the sticky rice in cold water until the water runs clear. Soak the rice in cold water for at least 30 minutes, or up to 4 hours.
- Drain the rice and place it in a steamer basket lined with cheesecloth. Steam the rice over boiling water for 20-25 minutes, or until tender.
- While the rice is steaming, heat the coconut milk, sugar, and salt in a small saucepan over medium heat. Stir until the sugar has dissolved.
- When the rice is done, transfer it to a bowl and pour the coconut milk mixture over it. Stir to combine and let the rice sit for 10-15 minutes to absorb the liquid.
- To serve, divide the rice among four bowls and top with sliced mango. Sprinkle with sesame seeds.
