Mam Chung
Mam Chung is a traditional Vietnamese dish made with sticky rice, mung beans, and pork wrapped in banana leaves.
Ingredients - Serves 6
- Kitchen twine - For tying
- Banana leaves - 6, cut into squares
- Salt - 1 teaspoon
- Fish sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Dried shrimp - 1/4 cup, soaked
- Shiitake mushrooms - 5, soaked and sliced
- Pork belly - 1/2 pound, thinly sliced
- Mung beans - 1 cup
- Sticky rice - 2 cups
Let's Get Started
- Soak the sticky rice and mung beans separately in water for at least 4 hours or overnight.
- Drain the sticky rice and mung beans.
- In a large bowl, mix together the sticky rice, mung beans, pork belly, shiitake mushrooms, dried shrimp, garlic, fish sauce, and salt.
- Take a piece of banana leaf and place a portion of the mixture in the center.
- Fold the banana leaf over the mixture to form a square parcel.
- Secure the parcel with kitchen twine.
- Repeat with the remaining mixture and banana leaves.
- Steam the parcels for 2 hours, or until the sticky rice is cooked and the filling is tender.
- Remove the twine and serve the Mam Chung hot.
