Loobia Chiti
Loobia Chiti is a delicious Persian dish made with green beans, meat, and aromatic spices.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 2 cups
- Salt and pepper - To taste
- Cinnamon - 1/2 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Tomato paste - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Beef or lamb - 300 grams, cubed
- Green beans - 500 grams
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until golden brown.
- Add the cubed meat and cook until browned on all sides.
- Add the tomato paste, turmeric, cumin, cinnamon, salt, and pepper. Stir well to coat the meat.
- Add the green beans and water. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the meat is tender and the green beans are cooked.
- Stir in the lemon juice and fresh cilantro. Cook for an additional 5 minutes.
- Serve hot with steamed rice or bread.
