Linguine with Avocado Sauce
A creamy, rich pasta dish that's also healthy, thanks to the avocado. Perfect for a quick weeknight dinner.
Ingredients - Serves 4
- Basil leaves - A handful, chopped
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves
- Avocados - 2, ripe
- Linguine - 8 ounces
Let's Get Started
- Cook the linguine according to the package instructions.
- While the pasta is cooking, make the avocado sauce. In a food processor, combine the avocados, garlic, lemon juice, olive oil, and salt and pepper. Process until smooth.
- Drain the pasta, reserving some of the pasta water.
- Return the pasta to the pot and add the avocado sauce. Toss to combine, adding some of the reserved pasta water if needed to thin the sauce.
- Serve the pasta topped with the grated Parmesan cheese and chopped basil.
