Lentils with Brown Rice and Feta

Ingredients - Serves 4
- Salt and pepper - To taste
- Feta cheese - 1/2 cup, crumbled
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Lentils - 1 cup
- Water - 2 cups
- Brown rice - 1 cup
Let's Get Started
- In a saucepan, bring the water to a boil. Add the brown rice, reduce the heat to low, cover, and let simmer for 45 minutes.
- In another saucepan, add the lentils and enough water to cover them by 1 inch. Bring to a boil, then reduce the heat to low, cover, and let simmer for 20 minutes, or until the lentils are tender.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Drain the lentils and add them to the skillet with the onion and garlic. Stir to combine.
- Fluff the cooked rice with a fork and add it to the skillet. Stir to combine.
- Season with salt and pepper to taste.
- Serve the lentils and rice in bowls, topped with the crumbled feta cheese.
