Lentils with Brown Rice and Feta

Let's Get Started

  1. In a saucepan, bring the water to a boil. Add the brown rice, reduce the heat to low, cover, and let simmer for 45 minutes.
  2. In another saucepan, add the lentils and enough water to cover them by 1 inch. Bring to a boil, then reduce the heat to low, cover, and let simmer for 20 minutes, or until the lentils are tender.
  3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  4. Drain the lentils and add them to the skillet with the onion and garlic. Stir to combine.
  5. Fluff the cooked rice with a fork and add it to the skillet. Stir to combine.
  6. Season with salt and pepper to taste.
  7. Serve the lentils and rice in bowls, topped with the crumbled feta cheese.
