Lentil Gumbo with Okra

Ingredients - Serves 6
- Salt and pepper - To taste
- Cajun seasoning - 2 tablespoons
- Vegetable broth - 4 cups
- Diced tomatoes - 1 can (14.5 oz)
- Lentils - 1 cup, rinsed
- Okra - 2 cups, sliced
- Celery - 2 stalks, chopped
- Green bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, bell pepper, and celery. Cook until the vegetables are soft, about 5 minutes.
- Add the okra and cook for another 5 minutes, until the okra is soft.
- Add the lentils, diced tomatoes, vegetable broth, and Cajun seasoning. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, until the lentils are tender.
- Season with salt and pepper to taste.
