Lentil and Cottage Cheese Stuffed Peppers
These stuffed peppers are a healthy and delicious meal. The lentils and cottage cheese provide plenty of protein, while the peppers add a nice crunch and sweetness.
Ingredients - Serves 4
- Parsley - 1 tablespoon, chopped
- Salt and pepper - To taste
- Tomato sauce - 1 cup
- Cottage cheese - 1 cup
- Lentils - 1 cup, cooked
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 1 tablespoon
- Bell peppers - 4, halved and seeds removed
Let's Get Started
- Preheat the oven to 375°F.
- Place the halved peppers in a baking dish, cut side up.
- Heat the olive oil in a pan over medium heat. Add the onion and garlic and cook until soft.
- Add the cooked lentils, cottage cheese, and tomato sauce to the pan. Season with salt and pepper.
- Spoon the lentil and cheese mixture into the pepper halves.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for another 5 minutes, or until the peppers are tender and the filling is heated through.
- Garnish with chopped parsley before serving.
