Lentil and Chicken Sausage Stew

Ingredients - Serves 6
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Diced tomatoes - 1 can
- Chicken broth - 4 cups
- Lentils - 1 cup, rinsed
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Onion - 1 large, diced
- Chicken sausage - 1 pound, sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chicken sausage and cook until browned. Remove from the pot and set aside.
- In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
- Add the lentils, chicken broth, diced tomatoes, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils are tender.
- Return the chicken sausage to the pot and cook for an additional 5 minutes, or until heated through.
- Serve the stew hot, with crusty bread on the side if desired.
