Lentil and Chicken Sausage Stew

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken sausage and cook until browned. Remove from the pot and set aside.
  3. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  4. Add the lentils, chicken broth, diced tomatoes, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils are tender.
  6. Return the chicken sausage to the pot and cook for an additional 5 minutes, or until heated through.
  7. Serve the stew hot, with crusty bread on the side if desired.
