Let's Get Started
- Heat the olive oil in a potjie pot over an open fire.
- Add the lamb shanks and brown on all sides. Remove and set aside.
- Add the onions and garlic to the pot and cook until softened.
- Return the lamb shanks to the pot and add the carrots, potatoes, beef stock, wine, bay leaves, salt, and pepper.
- Cover and simmer for about 3 hours, or until the lamb is tender and the flavors are well combined.
- Adjust the seasoning if necessary, then serve hot.
