Köttgryta
Köttgryta is a traditional Swedish beef stew made with tender beef, onions, and flavorful spices.
Ingredients - Serves 6
- Fresh parsley - For garnish
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Dijon mustard - 1 tablespoon
- Worcestershire sauce - 2 tablespoons
- Tomato paste - 2 tablespoons
- Beef broth - 4 cups
- Potatoes - 4 medium, diced
- Carrots - 3 medium, sliced
- Garlic - 4 cloves, minced
- Onions - 2 large, chopped
- Beef - 1.5 kg, cubed
Let's Get Started
- In a large pot, heat olive oil over medium heat.
- Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onions and minced garlic. Sauté until the onions are translucent.
- Add the carrots and potatoes to the pot and cook for a few minutes.
- Return the beef to the pot and pour in the beef broth.
- Stir in the tomato paste, Worcestershire sauce, Dijon mustard, paprika, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 hours, or until the beef is tender.
- Remove the bay leaf before serving.
- Garnish with fresh parsley and serve the köttgryta hot with mashed potatoes or crusty bread.
