Kuku Sabzi
Kuku Sabzi is a traditional Persian herb frittata packed with fresh herbs and spices.
Ingredients - Serves 6
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Turmeric - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Spinach - 1 cup, chopped
- Fresh fenugreek leaves - 1/2 cup, chopped
- Fresh chives - 1/2 cup, chopped
- Fresh dill - 1 cup, chopped
- Fresh cilantro - 1 cup, chopped
- Fresh parsley - 1 cup, chopped
- Eggs - 6
Let's Get Started
- Preheat the oven to 350°F.
- In a large bowl, beat the eggs.
- Add the chopped herbs, spinach, baking powder, turmeric, salt, and pepper to the eggs. Mix well.
- Heat the vegetable oil in an oven-safe skillet over medium heat.
- Pour the egg mixture into the skillet and spread it evenly.
- Cook for 5 minutes, or until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 30 minutes, or until the top is golden brown and the center is set.
- Remove from the oven and let it cool for a few minutes.
- Slice and serve the Kuku Sabzi warm or at room temperature.
